Fried onions are a food product that retains a considerably high oil content after the frying process, thus requiring an oil draining process to improve the quality and shelf life of the product. A 1 kg capacity fried onion oil draining machine (spinner) was developed in previous research; however, it still utilizes a direct drive system, which means the rotational speed of the spinner tube cannot be adjusted. This condition potentially affects the draining results and the machine's operational stability. This study aims to modify the previously developed 1 kg capacity fried onion oil draining machine so that its rotational speed can be adjusted, resulting in a draining performance that better aligns with process requirements. Modifications were made to the transmission system by adding a pulley and a V-belt, along with a dimmer for speed regulation. Additionally, adjustments were made to the machine's frame to support the installation of the new transmission system. The research methodology encompasses problem analysis, literature review, machine redesign, equipment assembly and modification, as well as machine performance testing. The tests were conducted using variations in the rotational speed of the spinner tube, specifically low, medium, and high speeds. The observed parameters include the rotational speed of the spinner tube (RPM), draining time, and the weight of the fried onions after the draining process. The results of this research are expected to produce a fried onion oil draining machine that offers greater flexibility in speed adjustment, operates with enhanced stability, and is capable of delivering optimal draining results without damaging the texture of the fried onions.
